There have been many campaigns in both the UK and the US to promote the eating of fruit and vegetables. The UK government and National Health Service have been encouraging us to eat at least 5 helpings of fruit and vegetables a day but why?

Fruit and vegetables contain powerful antioxidants which help our bodies to fight free radicals, such as cancer causing agents, and help us to fight the signs of ageing.
Fruit and vegetables contain fibre which lowers cholesterol levels, helps balance blood sugar and helps us to reduce our risk of colon cancer.
Eating plenty of fruit and vegetables helps to reduce the risk of heart disease and cancer.
Fruit and vegetables also taste great and because there is such a wide range available in our supermarkets and farm shops, we can enjoy a real variety and even fussy eaters can find ones that they like.
How can we ensure that we get at least 5 a day?
Look through your recipe collection to find fruit recipes, vegetable recipes and vegetarian recipes to give you some inspiration for healthy recipes which include plenty of fruit and vegetables.
Slice fruit like bananas or strawberries onto your cereal and wash your breakfast down with a glass of fruit juice which counts as one portion.
Use chopped or pureed vegetables like courgettes, carrots, peppers and mushrooms in pasta sauces and soups to make them more healthy recipes.
Look in your recipe collection or books for stir-fry healthy recipes. Chinese or Thai stir-fry recipes are great because they are low fat recipes and because the vegetables are cooked in a wok over a high heat, the vegetables retain their goodness and taste.

Serve main meals with a selection of vegetables or a fresh leafy salad, you can find plenty of salad recipes on-line.

Buy fruit and vegetables that are in season as these will naturally contain more vitamins and minerals and will taste better too.
Buy organic fruit and vegetables. These can be found at your supermarket or there will probably be an organic fruit and vegetable box scheme in your area .
All you have to do is to find some healthy recipes to cook your fresh, great tasting fruit and vegetables.
